After at least 3 years of bottle fermentation, matured vintages of the sparkling pear wine are opened and gently dealcoholized, then blended with a touch of pear juice and flower extracts. Sparkling.

Today, there generally is a preference for less sweet drinks; we therefore often harvest fruits before they are fully ripe.
